Granola recipe
Posted by theresa | Apr 8, 2008I recently began making my own granola and not only does the family enjoy it, but so have others who have tasted it. Since I'm tired of writing out the recipe, I decided to post it here for the entire blogosphere to enjoy. I hope you do. It's from the More-with-Less Cookbook. -- Theresa
Simple Granola
Preheat oven to 250.
Combine in large mixing bowl:
2c. whole wheat flour
6c. rolled oats (not quick oats)
1c. coconut
1c. wheat germ
Blend together separately:
1/2c. water
1c. oil
1c. honey
2t. vanilla
1T. salt (I omit this)
Spread out on 2 greased cookie sheets (I don't grease them) and bake 1 hour, or until dry and golden. Store in covered containers. I stir the granola 1/2 way through baking time. It gets crunchier when baked on a metal pan as opposed to a baking stone. I have to bake it longer on my baking stone.
You can add other things like dried fruit or nuts. One time I added sliced almonds and used 1t. vanilla and 1t. almond extract. One time I added 1c. of unsalted sunflower seeds. One of these days I'm going to make granola bars with this granola.
You can also use corn syrup instead of honey, but I never did. Another option in the cookbook (but I never did it) says:
With same liquids, use 4 c. quick oats, 3 c. whole wheat flour, 1 c. wheat germ, 1 c. soy flour, 1 c. coconut, 1 c. nuts. The soy flour and nuts would provide protein.
