Recipe: Plum and Ginger Soda
Posted by theresa | Sep 4, 2008Here's a recipe that I thought was really tasty and since plums are in season now is the time to make it. Maybe you can find some very ripe plums on the reduced pile. They are perfect for this recipe.
Plum and Ginger Soda
2 ripe plums, skin on, chopped (I used probably the equivalent of 3 large red plums)
3 cups water
1 tablespoon fresh ginger, peeled and sliced
3/4 cup sugar
1 can club soda
Bring water to boil. Toss in chopped plums. Reduce heat and simmer until plums are cooked and mushy and the liquid is bright red, about 15-20 min. In the last 5 minutes of simmering, toss in ginger slices.
Turn off heat and stir in sugar until fully dissolved. Let cool. Strain liquid and discard solids.
Add ice cubes to each glass and fill with plum syrup to 2/3 of the way. Top with club soda. Enjoy!
PS. Tom affirms the tasty nature of the recipe, but likes to add a little less club soda.
